4 boneless, skinless chicken breasts

1 cup Hatch green chiles, diced (canned or fresh)

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

½ cup green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Chicken: Season the chicken breasts with salt, pepper, garlic powder, onion powder, smoked paprika, and cumin. Rub the seasonings evenly over both sides of the chicken.

      Sear the Chicken: In a large skillet, heat a tablespoon of oil over medium-high heat. Add the seasoned chicken breasts and sear for about 5 minutes on each side until golden brown. They don’t need to be fully cooked—just browned on the outside. Transfer the chicken to a baking dish.

        Make the Sauce: In the same skillet, reduce the heat to medium and add the diced Hatch green chiles. Sauté for about 2 minutes until fragrant. Add the softened cream cheese and sour cream, stirring until smooth. Mix in half of the cheddar and Monterey Jack cheeses, allowing them to melt into the sauce.

          Combine and Spread: Pour the cheesy hatch chili mixture evenly over the seared chicken breasts in the baking dish. Sprinkle the remaining cheddar and Monterey Jack cheeses on top.

            Bake: Place the baking dish in the preheated oven and bake for approximately 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
