2 cups cooked rotisserie chicken, shredded

1 cup Hatch green chiles, diced (fresh or canned)

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/4 teaspoon salt (to taste)

1/4 teaspoon black pepper (to taste)

8 flour tortillas (8-inch size)

1/4 cup fresh cilantro, chopped (for garnish)

Salsa and sour cream (for serving)

Instructions
 

Preheat the Skillet: Heat a large non-stick skillet over medium heat.

    Prepare the Filling: In a large mixing bowl, combine the shredded rotisserie chicken, diced Hatch green chiles, Monterey Jack cheese, cheddar cheese, cream cheese, garlic powder, onion powder, cumin, smoked paprika, salt, and black pepper. Mix until fully combined.

      Assemble Quesadillas: Place a tortilla in the heated skillet. Spoon a generous amount of the chicken and cheese mixture onto one half of the tortilla. Fold the tortilla over to create a half-moon shape.
