Cheesy Mississippi Mud Potatoes

2 pounds baby potatoes (halved)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup sour cream

1/2 cup cream cheese, softened

1/4 cup mayonnaise

4 green onions, chopped

4 slices cooked bacon, crumbled

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, for garnishing

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Boil the Potatoes: In a large pot, bring salted water to a boil. Add the baby potatoes and cook for about 10-12 minutes or until fork-tender. Drain and let them cool slightly.

      Prepare the Cheese Mixture: In a large mixing bowl, combine the sour cream, cream cheese, mayonnaise, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined and creamy.

        Combine Ingredients: Fold in the chopped green onions, crumbled bacon, and half of the cheddar and mozzarella cheeses into the cheese mixture. Then gently mix in the cooled baby potatoes until they are well coated.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

            Add Remaining Cheese: Sprinkle the remaining cheddar and mozzarella cheese on top of the potato mixture to create a cheesy crust.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
