1 lb (450g) ground beef

4 medium potatoes, peeled and diced into 1-inch cubes

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup beef broth

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

½ teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Ground Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef, cooking until browned and cooked through. Drain excess grease if necessary.
