Ingredients

4 cups frozen diced potatoes

1 cup sour cream

1 cup ranch dressing

2 cups shredded cheddar cheese

1 cup seasoned breadcrumbs

1/2 cup cooked and crumbled bacon (optional)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 green onion, chopped (for garnish)

Instructions

Preheat the oven: Start by preheating your oven to 375°F (190°C).

Prepare the potato mixture: In a large mixing bowl, combine the frozen diced potatoes, sour cream, ranch dressing, half of the shredded cheddar cheese (1 cup), garlic powder, onion powder, salt, and black pepper. Mix well until all the potatoes are evenly coated with the creamy mixture.

Add bacon: If you're using bacon, fold in the crumbled bacon into the potato mixture for added flavor.

Transfer to baking dish: Grease a 9x13 inch baking dish with cooking spray or a bit of butter. Pour the potato mixture into the dish and spread it out evenly.

Top with breadcrumbs and cheese: In a small bowl, mix the seasoned breadcrumbs with the remaining 1 cup of shredded cheddar cheese. Evenly sprinkle this mixture over the top of the potato mixture.

Bake the casserole: Place the baking dish in the preheated oven and bake for about 45-50 minutes or until the top is golden brown and the potatoes are tender.

Garnish and serve: Once baked, remove the casserole from the oven and let it sit for 5-10 minutes. Garnish with chopped green onions before serving.

Enjoy! Serve hot as a hearty side dish or a main meal; this creamy, cheesy casserole is sure to be a crowd-pleaser!
