Ingredients
  

  • 1.0 cup cornmeal
  • 1.0 cup all-purpose flour
  • 0.5 cup shredded sharp cheddar cheese
  • 1.0 tablespoon fresh sage, chopped
  • 1.0 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1.0 cup buttermilk
  • 2.0 large eggs
  • 0.25 cup vegetable oil
  • 1.0 tablespoon honey
  • 2.0 cups cooked turkey, shredded
  • 4.0 slices bread
  • 0.5 cup sliced provolone or mozzarella cheese
  • 0.5 cup sautéed onions and bell peppers
  • 0.0 tablespoon butter for spreading

Instructions
 

  • Preheat your oven to 400°F (200°C). Grease an 8-inch square baking dish or line it with parchment paper.
  • In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and chopped sage. Mix well. In another bowl, whisk together the buttermilk, eggs, vegetable oil, and honey (if using). Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the shredded cheddar cheese.
  • Pour the cornbread batter into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown. Once baked, let it cool slightly before cutting into squares.
  • Heat a skillet over medium heat and add a little butter. If using, sauté the onions and bell peppers until softened; set aside. Layer your turkey on one slice of bread, top with sautéed vegetables (if desired), and add a slice of cheese. Top with another slice of bread. Spread a little butter on the outside of the sandwich for grilling.
  • Place the sandwich in the hot skillet. Cook for about 3-4 minutes per side, or until the bread is golden and crispy, and the cheese has melted.
  • Cut the cheesy sage cornbread into squares and serve it alongside the turkey melt. Enjoy the combination of the savory cornbread with the hearty turkey sandwich for a delightful meal!
