Cheesy Spinach and Sausage Quinoa Bake

1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

8 ounces Italian sausage, casings removed (or plant-based sausage for a vegetarian option)

4 cups fresh spinach, chopped

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid has been absorbed. Fluff with a fork and set aside.

    Cook Sausage and Veggies: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and Italian sausage, breaking the sausage into small pieces as it cooks. Cook until the sausage is browned and cooked through, about 5-7 minutes.

      Add Spinach and Seasonings: Stir in the chopped spinach, dried oregano, and red pepper flakes. Cook for another 2-3 minutes until the spinach is wilted. Season with salt and pepper to taste.

        Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, sausage and spinach mixture, ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix until well combined.

          Prepare Baking Dish: Preheat the oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish. Pour the quinoa mixture into the dish and spread it evenly.

            Top and Bake: Sprinkle the remaining mozzarella and Parmesan cheese over the top of the quinoa bake. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.
