Cheesy Spinach & Mushroom Quiche

1 pre-made pie crust (9-inch)

1 cup fresh spinach, chopped

1 cup mushrooms, sliced (button or cremini)

1 small onion, finely chopped

2 cloves garlic, minced

4 large eggs

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

Optional: fresh parsley for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add garlic and sliced mushrooms, sauté for another 5-7 minutes until the mushrooms are tender. Finally, stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.

      Prepare Quiche Filling: In a mixing bowl, whisk together the eggs, heavy cream, dried thyme, salt, and black pepper until well combined. Stir in the sautéed vegetable mixture.

        Assemble the Quiche: Place the pie crust in a 9-inch pie dish. Sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly at the bottom of the crust. Pour the egg and vegetable mixture over the cheese, gently shaking the pie dish to distribute the filling evenly.

          Bake: Place the quiche in the preheated oven and bake for 35-40 minutes, or until the edges are golden brown and a knife inserted in the center comes out clean.

            Cool & Serve: Remove the quiche from the oven and let it cool for about 10 minutes before slicing. Garnish with fresh parsley if desired, and serve warm or at room temperature.
