20 jumbo pasta shells

2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1 cup ricotta cheese

1 ½ cups mozzarella cheese, shredded (divided)

½ cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a mixing bowl, combine chopped spinach, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, oregano, salt, and black pepper. Mix until well combined.

        Stuff the Shells: Using a spoon, carefully fill each cooked shell with the spinach and cheese mixture.

          Assemble the Dish: Spread half of the marinara sauce evenly on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells on top of the sauce. Pour the remaining marinara sauce over the shells. Sprinkle the remaining ½ cup of mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Allow the dish to cool slightly before serving. Garnish with fresh basil leaves if desired.
