Ingredients

4 large flour tortillas

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons olive oil (for cooking)

1/4 cup chopped sun-dried tomatoes (optional, for added flavor)

Fresh basil leaves for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.

Prepare the Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, 3/4 cup of mozzarella cheese, Parmesan cheese, garlic powder, onion powder, and red pepper flakes. Mix well until all ingredients are fully incorporated. Season with salt and pepper to taste. If using, fold in the chopped sun-dried tomatoes for an extra flavor boost.

Assemble the Tortillas: Place a tortilla flat on a clean surface. Spoon a generous amount of the spinach filling onto one half of the tortilla, spreading it evenly. Fold the tortilla over to create a half-moon shape. Repeat this step with the remaining tortillas and filling.

Cook the Tortillas: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Place 2 folded tortillas in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining oil and tortillas.

Melt the Cheese: Transfer the cooked tortilla melts to the prepared baking sheet. Sprinkle the remaining mozzarella cheese over the tops. Bake in the preheated oven for about 5-7 minutes, or until the cheese is fully melted and bubbly.

Serve and Garnish: Remove from the oven and let cool for a minute. Cut each melt into wedges and garnish with fresh basil leaves if desired. Serve immediately, perhaps with a side of marinara sauce or sour cream for dipping.
