2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg, beaten

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 cups all-purpose flour

1 tablespoon baking powder

2 tablespoons sugar

1/2 teaspoon salt

1 3/4 cups milk

1/2 cup vegetable oil

Cooking spray (for waffle iron)

Preheat the Waffle Iron: Start by preheating your waffle iron according to the manufacturer's instructions.

    Prepare the Spinach Filling: In a skillet over medium heat, add a splash of olive oil or butter. Once hot, add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.

      Combine the Filling Ingredients: In a mixing bowl, combine the sautéed spinach, ricotta cheese, shredded mozzarella, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well-combined and set aside.

        Make the Waffle Batter: In another large bowl, whisk together the flour, baking powder, sugar, and salt. In a separate bowl, mix the milk and vegetable oil. Pour the wet ingredients into the dry ingredients and stir until just combined (it's okay if there are a few lumps).

          Cook the Waffles: Lightly spray the preheated waffle iron with cooking spray. Pour about 1/2 cup of the batter onto the waffle iron, spreading it a bit. Place about 2-3 tablespoons of the spinach filling in the center, then cover with an additional 1/2 cup of batter. Close the waffle iron and cook according to the manufacturer's instructions, usually for about 4-5 minutes until golden brown and crispy.
