Cheesy Taco Rice

2 cups chicken or vegetable broth

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 pound ground beef or turkey

1 packet taco seasoning (about 1 oz)

1 cup canned black beans, drained and rinsed

1 cup corn kernels (frozen or canned)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheddar cheese

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for serving)

Prepare the Rice: In a medium saucepan, combine the rice and chicken or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and fluff with a fork.

    Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and cook for another minute until fragrant.

      Season the Meat: Increase the heat to medium-high and add the ground beef or turkey to the skillet. Cook until browned and no longer pink, breaking it apart with a spoon as it cooks. Drain any excess fat.

        Combine Ingredients: Stir in the taco seasoning and mix well, incorporating it into the meat. Add the black beans, corn, and diced tomatoes, stirring everything together. Cook for about 5 minutes until the mixture is heated through.

          Mix Rice and Meat Mixture: Once the rice is cooked, add it to the skillet with the meat and vegetable mixture. Stir well to combine, making sure the rice is evenly distributed throughout.
