1 cup quinoa, rinsed

2 cups vegetable broth

1 can (15 oz) diced tomatoes, drained

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1/2 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup cream (optional for extra creaminess)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with olive oil.

    Cook the Quinoa: In a medium pot, combine the rinsed quinoa and vegetable broth. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.

      Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, drained diced tomatoes, halved cherry tomatoes, chopped basil, mozzarella cheese, half of the Parmesan cheese, garlic powder, onion powder, dried oregano, and season with salt and pepper. If using, stir in the cream for a richer flavor.

        Transfer to Baking Dish: Carefully pour the quinoa mixture into the greased baking dish, spreading it out evenly.

          Add Topping: Sprinkle the remaining Parmesan cheese evenly over the top of the casserole for a golden crust.

            Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the edges start to turn golden.

              Cool and Serve: Once baked, let the casserole cool for about 5 minutes before serving. Garnish with extra fresh basil leaves if desired.
