2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon black pepper

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 tablespoon olive oil

1/4 cup fresh parsley, chopped (optional for garnish)

Instructions
 

Prepare the Zucchini: Begin by grating the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth, sprinkle with salt, and let it sit for about 10-15 minutes to draw out excess moisture. Squeeze the towel to remove as much liquid as possible.

    Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

      Mix Dry Ingredients: In a mixing bowl, combine the flour, baking powder, garlic powder, onion powder, oregano, and black pepper. Whisk together until evenly mixed.

        Combine Ingredients: In a separate bowl, beat the eggs and mix in the olive oil. Add the drained zucchini, mozzarella cheese, and Parmesan cheese to the egg mixture, stirring until well combined.

          Form the Dough: Gradually add the dry ingredients to the zucchini mixture, folding it gently until a thick dough forms. Be careful not to overmix.

            Shape the Breadsticks: Transfer the dough to the prepared baking sheet. Using your hands or a spatula, spread and shape it into a rectangle about 1/2 inch thick.
