1 medium zucchini (about 1 cup, grated)

1 cup all-purpose flour

1 cup whole wheat flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

1/2 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1/3 cup vegetable oil (or melted coconut oil)

1 tsp vanilla extract

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. It should be relatively dry but still have some moisture left.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and cinnamon until evenly combined.

        Combine Sugars and Wet Ingredients: In another bowl, whisk the brown sugar and granulated sugar together with the eggs until well combined. Add in the oil and vanilla extract, whisking until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently to combine. Be careful not to overmix; it’s okay if there are a few lumps. Fold in the grated zucchini until well incorporated.
