1 cup unsulfured molasses

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon salt

1/4 cup raw sugar (for rolling cookies)

Prepare the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until it's light and fluffy, about 3-5 minutes.

      Mix in Molasses and Eggs: Add the molasses and eggs to the butter-sugar mixture, stirring until fully combined. The mixture should be smooth.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, ginger, cinnamon, cloves, and salt until evenly mixed.

          Incorporate the Dry into the Wet: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix; a few lumps are okay.

            Shape the Cookies: Using a tablespoon or cookie scoop, scoop out portions of dough and roll them into balls. Then roll each ball in raw sugar until fully coated.
