1/4 cup molasses

1 large egg

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground nutmeg

1/4 cup granulated sugar (for rolling)

Preheat your oven: Begin by preheating your oven to 350°F (175°C) and lining two baking sheets with parchment paper.

    Cream the butter and sugar: In a large mixing bowl, beat the softened butter and brown sugar together using an electric mixer on medium speed. Mix until the mixture is light and fluffy, approximately 3-5 minutes.

      Add molasses and egg: Once the butter and sugar are well combined, add in the molasses and egg. Beat until fully integrated.

        Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg until evenly mixed.

          Mix dry ingredients with wet ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix; you want the dough to be thick and sticky.

            Chill the dough: Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes. This step is crucial for achieving that chewy texture.
