Ingredients

2 ¼ cups all-purpose flour

2 teaspoons baking soda

2 teaspoons ground cinnamon

1 teaspoon ground ginger

½ teaspoon ground cloves

½ teaspoon salt

¾ cup unsalted butter, softened

1 cup brown sugar, packed

1/3 cup molasses

1 large egg

1 teaspoon vanilla extract

½ to 1 cup granulated sugar (for rolling)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.

Cream Butter and Sugar: In a large bowl, using a hand mixer or a stand mixer, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.

Add Molasses and Egg: Mix in the molasses, then add the egg and vanilla extract. Beat until well combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to over-mix as it can affect the texture.

Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This helps the cookies maintain their shape and enhances their flavor.

Shape the Cookies: Once chilled, scoop out tablespoons of dough and roll them into balls. Roll each ball in granulated sugar until fully coated.

Bake: Place the cookie dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 8-10 minutes, or until they are set at the edges but still soft in the center.

Cool: Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: These chewy molasses spice cookies are best enjoyed warm with a glass of milk or a cup of tea. Store any leftovers in an airtight container at room temperature for up to a week.
