1 lb (450g) boneless, skinless chicken thighs or breasts, sliced into thin strips

3 cups broccoli florets, fresh or frozen

1 red bell pepper, sliced

2 cloves garlic, minced

1 inch ginger, minced or grated

3 tablespoons soy sauce (low-sodium preferred)

1 tablespoon oyster sauce (optional)

1 tablespoon cornstarch

2 tablespoons vegetable oil (for frying)

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional, for heat)

Salt and black pepper, to taste

Cooked rice or noodles, for serving

Sesame seeds, for garnish

Sliced green onions, for garnish

Instructions
 

Marinate Chicken: In a bowl, combine the sliced chicken with a tablespoon of soy sauce, cornstarch, and a pinch of salt and pepper. Let it marinate for about 15-20 minutes while you prepare the vegetables.

    Prepare the Sauce: In a small bowl, mix together the remaining soy sauce, oyster sauce (if using), sesame oil, and red pepper flakes. Set aside.

      Stir-Fry the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken in a single layer. Let it sear without stirring for about 2-3 minutes until browned, then stir-fry until fully cooked (about 5-7 minutes). Remove the chicken from the pan and set aside.

        Sauté Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant. Then add the broccoli and red bell pepper. Stir-fry for 3-4 minutes until the vegetables are vibrant and slightly tender but still crisp.

          Combine Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour the sauce over the chicken and broccoli, tossing to coat everything evenly. Stir-fry for another 2-3 minutes, allowing the sauce to thicken slightly and coat all the ingredients.

            Serve: Remove from heat, and serve hot over cooked rice or noodles. Garnish with sesame seeds and sliced green onions.
