Chicken Fried Rice

2 cups cooked jasmine rice (preferably day-old)

1 lb boneless, skinless chicken thighs, diced

2 tablespoons soy sauce

1 tablespoon sriracha (adjust to taste)

2 tablespoons sesame oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups mixed vegetables (carrots, peas, and bell peppers)

3 green onions, chopped

Juice and zest of 1 orange

Juice of 1 lime

2 eggs, lightly beaten

Salt and black pepper to taste

Fresh cilantro, for garnish

Instructions
 

Marinate the Chicken: In a medium bowl, mix diced chicken thighs with soy sauce, sriracha, orange juice, and a pinch of salt. Let it marinate for 15-30 minutes to absorb the flavors.

    Cook the Chicken: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the remaining tablespoon of sesame oil. Add chopped onion and sauté for 2-3 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.

        Add Vegetables: Toss in the mixed vegetables and sauté for 3-4 minutes until they begin to soften.

          Incorporate Rice: Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables. Allow it to fry for about 2 minutes.

            Scramble Eggs: Push the rice mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked. Once scrambled, mix them into the rice and vegetable mixture.

              Combine Ingredients: Return the cooked chicken to the skillet. Add the lime juice, orange zest, and chopped green onions. Mix everything well to ensure even distribution of flavors. Adjust seasoning with salt and pepper if needed.

                Serve: Remove from heat and garnish with fresh cilantro before serving.
