Chicken Pot Pie Noodle Skillet

Ingredients
  

2 cups rotini pasta

2 tablespoons olive oil

1 onion, diced

2 cloves garlic, minced

3 cups cooked chicken, shredded

1 cup carrots, diced

1 cup peas (fresh or frozen)

1 cup celery, diced

1 teaspoon dried thyme

1 teaspoon dried parsley

1 cup chicken broth

1 cup heavy cream

1/4 cup flour

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

1 tablespoon fresh parsley (optional, for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic to the skillet and cook for an additional 30 seconds until aromatic.

      Stir in the carrots, celery, and shredded chicken, cooking for about 5 minutes until the veggies begin to soften.

        Sprinkle the flour over the mixture and stir well to coat all the ingredients. Cook for 1-2 minutes to help eliminate the raw flour taste.

          Gradually pour in the chicken broth while stirring continuously to avoid lumps. Then add the heavy cream, thyme, parsley, salt, and pepper. Allow the mixture to simmer for 5-7 minutes until it thickens slightly.

            Cook the rotini pasta according to package instructions until al dente. Drain well and add it to the skillet, mixing everything gently to combine.

              Fold in the peas and cheddar cheese, stirring until the cheese is melted and the mixture is well combined. Cook for another 3 minutes.

                Optional: Before serving, sprinkle fresh parsley on top for added freshness and color.
