Ingredients

For Chicken Ricotta Meatballs:

1 pound ground chicken

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1/2 cup breadcrumbs

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup fresh parsley, chopped

For Spinach Alfredo Sauce:

2 tablespoons butter

2 cloves garlic, minced

1 cup heavy cream

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Pinch of nutmeg (optional)

Fresh basil, for garnish

Instructions

Prepare the Meatballs:

    - In a large mixing bowl, combine ground chicken, ricotta cheese, grated Parmesan cheese, breadcrumbs, egg, minced garlic, oregano, salt, black pepper, and parsley.

      - Mix gently until all ingredients are well incorporated, being careful not to overmix.

        Shape the Meatballs:

          - Preheat your oven to 400°F (200°C).

            - Using your hands, shape the mixture into small meatballs (about 1.5 inches in diameter) and place them on a baking sheet lined with parchment paper. You should yield about 16 meatballs.

              Bake the Meatballs:

                - Bake in the preheated oven for 20-25 minutes, or until cooked through and golden brown on the outside.

                  Prepare the Spinach Alfredo Sauce:

                    - While the meatballs are baking, melt the butter in a large skillet over medium heat.

                      - Add the minced garlic and sauté for about 1 minute until fragrant.

                        - Slowly pour in the heavy cream and stir continuously as it simmers.

                          - Once the cream is heated through, add the chopped spinach and cook for about 2-3 minutes, until wilted.

                            - Stir in the grated Parmesan cheese, salt, black pepper, and nutmeg (if using). Adjust seasonings to taste.

                              Combine and Serve:

                                - Once the meatballs are done baking, carefully place them into the Alfredo sauce, allowing them to simmer for a minute to soak in the flavors.

                                  - Serve the chicken ricotta meatballs in the spinach Alfredo sauce, garnished with fresh basil.
