Chicken Skewers with Peach Salsa

For the Chicken Skewers:

1 pound boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

Salt and pepper, to taste

1 lemon, juiced

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Peach Salsa:

2 ripe peaches, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spice level)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine olive oil, minced garlic, smoked paprika, ground cumin, dried oregano, salt, pepper, and lemon juice. Mix well.

      - Add the chicken pieces and toss until fully coated. Cover and let marinate in the refrigerator for at least 30 minutes (up to overnight for deeper flavor).

        Prepare the Salsa:

          - In a medium bowl, mix the diced peaches, red onion, jalapeño, and cilantro.

            - Squeeze in the lime juice and season with salt. Gently toss to combine. Set aside to allow the flavors to meld.

              Assemble the Skewers:
