Chicken, Spinach, and Artichoke Lasagna

For the Lasagna Layers:

9 lasagna noodles (preferably whole wheat)

2 cups cooked chicken, shredded

1 cup frozen spinach, thawed and drained

1 can (14 oz) artichoke hearts, drained and chopped

1 cup ricotta cheese

2 cups mozzarella cheese, shredded

1 cup Parmesan cheese, grated

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

For the White Sauce:

4 tablespoons butter

4 tablespoons all-purpose flour

2 cups milk (preferably whole)

1/2 teaspoon nutmeg

Salt and pepper to taste

Prepare the Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain and lay them flat on a baking sheet to prevent sticking.

    Make the White Sauce: In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute until lightly golden. Gradually whisk in the milk, continuing to stir until the mixture thickens (about 5-7 minutes). Stir in nutmeg, salt, and pepper. Remove from heat.

      Prepare the Chicken Mixture: In a large bowl, combine the shredded chicken, thawed spinach, chopped artichokes, ricotta cheese, half of the mozzarella cheese, garlic, dried oregano, dried basil, and season with salt and pepper. Mix well until all ingredients are evenly incorporated.

        Assemble the Lasagna: Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, start by spreading a thin layer of white sauce on the bottom. Place 3 lasagna noodles side by side over the sauce. Spread half of the chicken mixture over the noodles, followed by another layer of white sauce. Repeat this layering process, finishing with a layer of noodles on top.

          Final Layer: On the top layer of noodles, pour the remaining white sauce and sprinkle the remaining mozzarella and all the Parmesan cheese evenly over the top.

            Bake: Cover the dish with aluminum foil (to prevent sticking, spray the foil with cooking spray) and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Serve: Let the lasagna cool for about 10 minutes before slicing. Enjoy warm, garnished with fresh herbs if desired.
