Chickpea and Spinach Curry

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

4 cups fresh spinach, washed and roughly chopped

1 medium onion, finely chopped

3 cloves garlic, minced

1 inch piece of ginger, grated

1 can (14 oz) coconut milk

1 tbsp olive oil or coconut oil

2 tsp curry powder

1 tsp cumin

½ tsp turmeric

½ tsp red chili flakes (adjust to taste)

Salt and black pepper to taste

Juice of 1 lime

Fresh cilantro for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes soft and translucent. Add the minced garlic and grated ginger, stirring frequently for another 2 minutes until fragrant.

    Add Spices: Stir in the curry powder, cumin, turmeric, and red chili flakes. Cook for an additional minute to toast the spices, allowing their flavors to develop.

      Chickpeas & Coconut Milk: Add the drained chickpeas to the pot, mixing them well with the spice mixture. Pour in the coconut milk, and stir everything together. Bring the mixture to a gentle simmer.

        Add Spinach: Gradually add the chopped spinach to the pot, stirring until it wilts down and is well combined with the chickpea and coconut mixture. This should take about 3-4 minutes.

          Season and Finish: Season the curry with salt and black pepper to taste. Squeeze in the lime juice and give it a final stir.

            Serve: Once heated through, remove from heat. Ladle the Chickpea and Spinach Delight into bowls and garnish with fresh cilantro if desired. Serve with steamed rice or warm naan for a complete meal.
