Ingredients
  

1 pound ground beef or turkey

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 can (28 oz) crushed tomatoes

2 tablespoons tomato paste

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

4 cups elbow macaroni

4 cups beef or vegetable broth

1 cup shredded sharp cheddar cheese

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Meat: In a large pot or Dutch oven, brown the ground beef or turkey over medium heat, breaking it apart as it cooks. Once browned, drain excess fat if necessary.

    Sauté Vegetables: Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent and fragrant, about 5 minutes.

      Add Beans and Tomatoes: Stir in the kidney beans, pinto beans, crushed tomatoes, and tomato paste. Mix well to combine.

        Seasoning: Add chili powder, cumin, smoked paprika, cayenne pepper, and salt and pepper to taste. Stir until all ingredients are well combined.

          Add Macaroni and Broth: Pour in the beef or vegetable broth, and bring the mixture to a boil. Once boiling, add the elbow macaroni and stir well.

            Cook the Pasta: Reduce the heat to a simmer, cover, and cook for about 10-12 minutes or until the macaroni is tender, stirring occasionally to prevent sticking.

              Cheesy Finish: Once the pasta is cooked, remove the pot from the heat and stir in the shredded cheddar cheese until melted and creamy.

                Serve: Taste and adjust seasoning if necessary. Ladle the chili mac into bowls and garnish with fresh cilantro if desired. Enjoy hot!
