6 ripe medium tomatoes (about 2 lbs), quartered

1 medium yellow onion, chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon sea salt (adjust to taste)

1/4 teaspoon black pepper

1/2 teaspoon sugar (to enhance the sweetness of tomatoes)

1 cup fresh basil leaves (plus extra for garnish)

2 cups vegetable broth (cold)

1 tablespoon balsamic vinegar

1/2 teaspoon red pepper flakes (optional for heat)

1 cup Greek yogurt or sour cream (for a creamy touch, optional)

Instructions
 

Roast the Tomatoes: Preheat your oven to 400°F (200°C). Spread the quartered tomatoes and chopped onion on a baking sheet. Drizzle with olive oil, sprinkle with sea salt and black pepper. Roast in the oven for 25-30 minutes, or until the tomatoes are slightly caramelized and the onion is tender.

    Sauté Garlic: In a small skillet, heat a teaspoon of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Remove from heat.

      Blend the Soup: In a blender, combine the roasted tomatoes and onions, sautéed garlic, sugar, and fresh basil leaves. Pour in the cold vegetable broth. Blend until smooth and creamy. You can adjust the consistency by adding more vegetable broth if needed.
