2 lbs pork shoulder, cut into long strips

1/4 cup hoisin sauce

1/4 cup soy sauce

1/4 cup honey

2 tablespoons Chinese rice wine (Shaoxing wine)

1 tablespoon five-spice powder

1 tablespoon garlic, minced

1 tablespoon ginger, minced

1 teaspoon red food coloring (optional, for color)

1 tablespoon sesame oil

1 tablespoon maltose (or extra honey)

Sliced green onions (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Pork:

    - In a large bowl, mix together the hoisin sauce, soy sauce, honey, rice wine, five-spice powder, garlic, ginger, and red food coloring (if using). Add the pork strips to the mixture, ensuring they are well coated. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight for maximum flavor.

      Preheat the Oven:

        - Preheat your oven to 375°F (190°C). Line a baking tray with aluminum foil and place a wire rack on top. This will allow the fat to drain off while cooking.

          Prepare the Pork for Baking:

            - Remove the pork from the marinade, allowing any excess to drip off. Reserve the marinade for basting later. Arrange the pork on the wire rack in a single layer.

              Bake the Pork:

                - Bake the pork in the preheated oven for 25 minutes. After 25 minutes, remove it and baste with the reserved marinade.

                  - Return to the oven and bake for another 20 minutes, basting again halfway through.

                    Glazing:

                      - Mix the maltose with sesame oil and brush this mixture over the pork. Increase the oven temperature to 425°F (220°C) and bake for an additional 10-15 minutes or until the pork is caramelized and slightly charred, turning halfway through for even coloring.

                        Rest and Slice:

                          - Remove from the oven and let the pork rest for 10 minutes. Slice it into bite-sized pieces before serving.

                            Garnish:

                              - Serve hot, garnished with sliced green onions and sesame seeds. Enjoy your Chinese BBQ Pork with steamed rice or in a bun!
