For the Churros:

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 teaspoon salt

1 teaspoon ground cinnamon

3 large eggs

1/4 cup granulated sugar (for rolling)

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

For the Chocolate Coating:

1 cup semisweet chocolate chips

2 tablespoons coconut oil

For the Assembly:

1 pint chocolate or vanilla ice cream

Optional toppings: crushed nuts, sprinkles, or chocolate sauce

Instructions
 

Make the Churro Dough:

    - In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.

      - Remove from heat and quickly stir in flour and cinnamon until a ball forms.

        - Allow cooling for about 5 minutes. Add eggs one at a time, mixing well after each addition until dough is smooth and glossy. Stir in vanilla extract.

          Prepare for Frying:

            - Heat oil in a deep fryer or large skillet to 350°F (175°C). Line a plate with paper towels for draining.

              Fry the Churros:

                - Fill a piping bag fitted with a large star tip with churro dough. Carefully pipe 6-inch strips of dough into the hot oil. Fry until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

                  Coat the Churros:

                    - In a shallow bowl, mix granulated sugar and cinnamon. While churros are still warm, roll them in the cinnamon-sugar mixture until fully coated. Set aside to cool.

                      Chocolate Coating:

                        - In a heatproof bowl, melt chocolate chips and coconut oil together over a double boiler or in the microwave. Stir until smooth. Dip churros halfway into the melted chocolate and let it set on parchment paper.
