Chocolate Raspberry Truffles

8 oz high-quality dark chocolate (70% cocoa), chopped

1/2 cup heavy cream

1/2 cup fresh raspberries, puréed

1 tablespoon raspberry extract (optional)

1 tablespoon unsalted butter, softened

1/2 cup cocoa powder (for dusting)

1/2 cup crushed freeze-dried raspberries (for garnishing)

Pinch of sea salt

Instructions
 

In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat and pour it over the chopped dark chocolate in a heatproof bowl. Let it sit for 2-3 minutes to melt the chocolate.

    Stir the chocolate and cream mixture until smooth and glossy. Add the raspberry purée, raspberry extract (if using), softened butter, and a pinch of sea salt. Mix until fully combined.

      Cover the bowl with plastic wrap and Refrigerate for about 1-2 hours, or until the mixture is firm enough to scoop.

        Once chilled, use a small cookie scoop or melon baller to portion out the chocolate ganache, rolling each scoop into a ball with your hands (you might want to dust your hands with cocoa powder to prevent sticking).

          Roll the truffles in cocoa powder, then, if desired, in crushed freeze-dried raspberries for a vibrant finish.

            Place the finished truffles on a parchment-lined baking sheet and refrigerate again for about 30 minutes to set.

              Serve chilled or at room temperature and enjoy the decadent melt-in-your-mouth experience!
