6 medium-sized Granny Smith apples, peeled, cored, and quartered

1 cup granulated sugar

1/2 cup unsalted butter (1 stick)

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 sheet puff pastry (thawed if frozen)

Pinch of salt

Optional: whipped cream or vanilla ice cream for serving

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Caramel: In a 10-inch cast-iron skillet, combine the granulated sugar and butter over medium heat. Stir gently until the sugar is dissolved and the mixture begins to bubble. Let it cook for about 5 minutes until it turns a golden amber color, stirring occasionally to ensure it doesn’t burn.

      Add Apples and Flavorings: Carefully add the apple quarters to the caramel mixture, arranging them in a circular pattern. Sprinkle the ground cinnamon and a pinch of salt over the apples. Drizzle with vanilla extract and stir gently to combine. Cook for an additional 10 minutes, turning the apples occasionally until they are slightly softened.

        Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface to ensure it's slightly larger than the skillet. Drape the pastry over the cooked apples, tucking the edges down around the apples to encase them within the pastry.

          Bake the Tarte Tatin: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the puff pastry is golden brown and puffy.

            Invert and Serve: Once baked, remove the skillet from the oven and allow it to cool for just a few minutes. Carefully place a serving plate on top of the skillet and, using oven mitts, invert the skillet to release the tarte. Let it sit for a couple of minutes to let the caramel drizzle down.

              Serve: Slice the tarte into wedges and serve warm, optionally with whipped cream or a scoop of vanilla ice cream.
