Cinnamon Roll Protein Crepes

1 cup oats (blended into flour)

1 scoop vanilla protein powder

1 cup almond milk (or any milk of choice)

2 large eggs

1 tsp vanilla extract

1 tsp cinnamon

1/4 tsp salt

1 tbsp melted coconut oil (plus extra for cooking)

2 tbsp maple syrup (for filling)

1 tbsp brown sugar (for filling)

Cream cheese or Greek yogurt (for topping, optional)

Additional maple syrup (for drizzling, optional)

Make Oat Flour: Start by blending the oats in a blender or food processor until they reach a fine flour consistency. Measure out 1 cup of the oat flour for the crepes.

    Mix Wet Ingredients: In a mixing bowl, whisk together the blended oat flour, vanilla protein powder, almond milk, eggs, vanilla extract, cinnamon, salt, and melted coconut oil until smooth and well combined. Let the batter sit for about 10-15 minutes to thicken.

      Cook the Crepes: Heat a non-stick skillet over medium heat and lightly grease it with coconut oil. Pour about 1/4 cup of batter into the skillet, swirling the pan to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift and the surface begins to bubble. Carefully flip the crepe and cook for another 1 minute. Remove from the pan and keep warm. Repeat with the remaining batter.

        Prepare the Filling: In a small bowl, mix together the maple syrup and brown sugar to create a sweet filling reminiscent of cinnamon roll filling. Set aside.

          Assemble the Crepes: Place a crepe on a plate and drizzle the maple-brown sugar mixture over one half. Roll the crepe tightly from one side to the other. Repeat with the remaining crepes.
