All-purpose flour is the backbone of the cinnamon roll dough, providing the necessary structure and texture. It contains a moderate level of protein, which helps develop gluten as you knead the dough. This gluten formation is vital for achieving that tender yet elastic texture that cinnamon rolls are known for.

Ingredients

For the Dough:

4 cups all-purpose flour

1/4 cup granulated sugar

1 packet (2 1/4 tsp) active dry yeast

1 cup whole milk (warmed to about 110°F)

1/4 cup unsalted butter (melted)

2 large eggs

1 tsp salt

For the Filling:

1/2 cup brown sugar (packed)

2 tbsp ground cinnamon

1/4 cup unsalted butter (softened)

1/2 cup pecans (chopped)

For the Glaze:

1 cup powdered sugar

2 tbsp maple syrup

1-2 tbsp milk (adjust for desired consistency)

A pinch of salt

Instructions

Prepare the Yeast: In a small bowl, combine warm milk and granulated sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes, until foamy.

Make the Dough: In a large bowl, combine flour and salt. Create a well in the center and add the melted butter and beaten eggs. Pour in the yeast mixture. Mix until a dough forms.

Knead the Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic. Place in a greased bowl, cover with a cloth, and let it rise in a warm area for 1 hour, or until it doubles in size.

Prepare the Filling: While the dough is rising, mix the brown sugar and cinnamon in a small bowl. Set aside.

Roll Out the Dough: Punch down the risen dough and roll it out on a floured surface to a rectangle, approximately 16x12 inches.

Spread the Filling: Evenly spread the softened butter over the dough, then sprinkle the cinnamon-sugar mixture, followed by the chopped pecans.

Roll Up the Dough: Starting from the long edge, tightly roll the dough into a log. Pinch the edges to seal.

Cut the Rolls: Using a sharp knife or dental floss, cut the log into 12 equal pieces. Place the rolls in a greased 9x13 inch baking dish.

Second Rise: Cover the rolls and let them rise for another 30-40 minutes until puffed.

Preheat the Oven: Preheat your oven to 350°F (175°C).

Bake: Bake the rolls for 25-30 minutes, or until golden brown on top.

Make the Glaze: While the rolls are baking, whisk together powdered sugar, maple syrup, milk, and salt until smooth.

Glaze and Serve: Remove the rolls from the oven and let them cool slightly. Drizzle the glaze over the warm rolls and serve!
