Classic Cheddar & Broccoli Quinoa Casserole

1 cup quinoa, rinsed and drained

2 cups vegetable broth (or chicken broth)

2 cups fresh broccoli florets (or frozen, thawed)

1 cup sharp cheddar cheese, shredded

1 cup cottage cheese

1/2 cup milk (whole or low-fat)

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Dijon mustard

1/2 teaspoon smoked paprika (optional)

Salt and pepper to taste

1/4 cup breadcrumbs (for topping)

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch casserole dish with cooking spray or olive oil.

    Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until quinoa is fluffy and the broth is absorbed. Remove from heat and set aside.

      Prepare Broccoli: If using fresh broccoli, steam or blanch the florets for about 3-4 minutes until tender-crisp. Drain and set aside. If using frozen, ensure they are thawed and drained.

        Sauté Aromatics: In a skillet over medium heat, add a splash of olive oil. Sauté the chopped onion for 4-5 minutes until translucent. Add minced garlic and cook for another minute until fragrant.

          Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, sautéed onion and garlic, broccoli florets, sharp cheddar cheese, cottage cheese, milk, Parmesan cheese, Dijon mustard, smoked paprika (if using), salt, and pepper. Stir until everything is well combined.

            Transfer to Casserole Dish: Pour the quinoa and broccoli mixture into the prepared casserole dish, spreading it evenly.

              Add Topping: Sprinkle breadcrumbs evenly over the top of the casserole for a crunchy finish.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, until heated through and the top is golden and bubbly.
