Classic Chicken Alfredo Lasagna

For the Alfredo Sauce:

1 cup unsalted butter

4 cloves garlic, minced

4 cups heavy cream

1 ½ cups grated Parmesan cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

1 tsp Italian seasoning

1/2 tsp nutmeg (optional)

For the Lasagna:

12 lasagna noodles (cooked al dente)

3 cups cooked chicken, shredded (rotisserie chicken works well)

2 cups fresh spinach (optional)

1 cup ricotta cheese

1 cup shredded mozzarella cheese (for topping)

Fresh basil or parsley (for garnish)

Instructions
 

Prepare the Alfredo Sauce:

    - In a large saucepan over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.

      - Stir in the heavy cream, and bring it to a gentle simmer. Reduce heat to low, and add the Parmesan cheese, stirring until melted and creamy.

        - Season with salt, pepper, Italian seasoning, and nutmeg, then remove from heat.

          Cook the Lasagna Noodles:

            - Cook the lasagna noodles according to package instructions. Drain and set aside on a lightly oiled surface to prevent sticking.

              Assemble the Lasagna:

                - Preheat your oven to 375°F (190°C).

                  - In a 9x13-inch baking dish, spread a layer (about 1 cup) of Alfredo sauce at the bottom.

                    - Place 3 lasagna noodles over the sauce. Spread half of the shredded chicken over the noodles, followed by half of the ricotta cheese, half of the fresh spinach (if using), and a generous drizzle of Alfredo sauce.

                      - Repeat the layers: another 3 noodles, the remaining chicken, the remaining ricotta, spinach, and drizzle more Alfredo on top.

                        - Top with the last 3 noodles, covering them with the remaining Alfredo sauce. Sprinkle the shredded mozzarella cheese evenly over the top.

                          Bake the Lasagna:

                            - Cover the baking dish with foil (to prevent sticking, spray the foil with cooking spray) and bake for 25 minutes.

                              - Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                                Garnish and Serve:

                                  - Remove the lasagna from the oven and let it cool for about 10 minutes. Garnish with fresh basil or parsley before slicing and serving.
