Classic Chicken Pot Pie

2 cups cooked chicken, shredded or diced

1 cup carrots, diced

1 cup frozen peas

1 cup celery, diced

1 medium onion, chopped

4 cloves garlic, minced

4 cups chicken broth

1 cup milk

1/2 cup butter

1/3 cup all-purpose flour

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 ready-made pie crusts (or homemade if you prefer)

1 egg, beaten (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Filling: In a large saucepan over medium heat, melt the butter. Add chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables start to soften. Stir in the garlic and cook for another minute until fragrant.

      Make the Roux: Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.

        Add Broth and Milk: Gradually whisk in the chicken broth and milk, ensuring there are no lumps. Continue to stir until the mixture thickens, about 4-5 minutes.

          Add Seasonings & Chicken: Stir in the thyme, rosemary, and adjust salt and pepper to taste. Finally, fold in the cooked chicken and frozen peas. Remove from heat and set aside.

            Assemble the Pie: Roll out one pie crust and fit it into your pie dish. Pour the chicken filling into the crust. Top with the second pie crust, sealing edges by crimping with your fingers or a fork. Cut a few slits in the top crust to allow steam to escape.

              Egg Wash: Brush the top crust with the beaten egg for a golden finish.

                Bake the Pie: Place the pie in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
