For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

¼ cup all-purpose flour

1 tablespoon lemon juice

For the topping (optional):

Fresh berries (strawberries, blueberries, or raspberries)

Whipped cream or sour cream

Instructions
 

Prepare the crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Stir in the melted butter until the mixture resembles wet sand.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and allow it to cool while you prepare the filling.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

              - Add the granulated sugar and vanilla extract, beating for another minute until well incorporated.

                - Add the eggs one at a time, mixing on low speed just until blended. Make sure not to overmix to avoid incorporating too much air.

                  - Add the sour cream, flour, and lemon juice. Mix until just blended.

                    Assembly:

                      - Pour the cheesecake filling over the cooled crust in the springform pan, using a spatula to spread it evenly.

                        - Tap the pan gently on the counter to release any trapped air bubbles.

                          Bake the cheesecake:

                            - Bake in the preheated oven for 55-70 minutes, or until the edges are set and the center has a slight jiggle (it will firm as it cools).

                              - Turn off the oven and crack the oven door to allow the cheesecake to cool gradually for about 1 hour.

                                Cool and chill:

                                  - Once cooled, remove the cheesecake from the oven. Carefully run a knife around the edge to loosen it from the pan, then refrigerate for at least 4 hours or overnight to set completely.

                                    Serve:
