2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

1 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup unsalted butter, softened

3 large eggs

1 cup evaporated milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 unbaked 9-inch pie crust

Instructions
 

Preheat your oven to 350°F (175°C).

    Begin by peeling the sweet potatoes and cutting them into chunks. Boil them in a pot of water until tender, about 15-20 minutes. Drain and let cool.

      Once cooled, mash the sweet potatoes until smooth, and measure out 2 cups.

        In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

          Add the eggs one at a time, mixing well after each addition.

            Stir in the evaporated milk and vanilla extract until combined.

              Incorporate the mashed sweet potatoes, cinnamon, nutmeg, and salt. Mix until smooth and all ingredients are well combined.

                Pour the sweet potato filling into the unbaked pie crust, spreading it evenly.

                  Bake the pie in the preheated oven for 55-60 minutes, or until a toothpick inserted in the center comes out clean.

                    Allow the pie to cool on a wire rack for at least 2 hours before serving to let the filling set properly.
