1 pre-baked 9-inch pie crust

1 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

2 3/4 cups whole milk

3 large egg yolks, beaten

2 tablespoons unsalted butter

2 teaspoons pure vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract (for whipped cream)

Grated chocolate or chocolate shavings (for garnish)

Prepare the Filling: In a medium saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in the milk until smooth. Heat the mixture over medium heat, stirring constantly until it comes to a gentle boil and thickens (about 5-7 minutes).

    Temper the Egg Yolks: In a small bowl, beat the egg yolks. Once the milk mixture is boiling, scoop out about 1 cup of the hot mixture and slowly whisk it into the egg yolks to temper them. Then, whisk the tempered yolks back into the saucepan.

      Finish the Filling: Continue to cook for an additional 2 minutes, stirring constantly. Remove the saucepan from heat and stir in the butter and vanilla extract. Pour the filling into the pre-baked pie crust, smoothing the top. Cover with plastic wrap to prevent a skin from forming, and refrigerate for at least 4 hours, or until the filling is set.

        Make the Whipped Cream: In a large mixing bowl, using an electric mixer, beat the heavy whipping cream until it starts to thicken. Add the powdered sugar and 1/2 teaspoon vanilla extract, and beat until soft peaks form.
