Coconut Crusted Chicken Tenders

1 lb chicken tenders

1 cup all-purpose flour

2 large eggs, beaten

1 cup unsweetened shredded coconut

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp cayenne pepper (optional, for heat)

Cooking spray or vegetable oil (for baking or frying)

Prepare the Breading Stations: Set up three shallow dishes. In the first bowl, place the all-purpose flour and season with salt, black pepper, garlic powder, paprika, and cayenne pepper. In the second bowl, beat the eggs. In the third bowl, combine the shredded coconut and panko breadcrumbs.

    Coat the Chicken: Dredge each chicken tender in the flour mixture, ensuring it is completely coated. Shake off any excess flour, then dip it into the beaten eggs. Allow any excess egg to drip off before rolling the tender in the coconut and panko mixture, pressing gently to ensure it adheres well. Repeat this process for all chicken tenders.

      Cook the Chicken:

        - Baking Method: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray. Place the coated chicken tenders on the sheet and spray the tops with cooking spray to encourage browning. Bake for 20-25 minutes, flipping halfway through, until the tenders are golden brown and cooked through (internal temperature of 165°F or 74°C).

          - Frying Method: In a large skillet, heat about 1/2 inch of vegetable oil over medium heat. Once hot, carefully add the chicken tenders in batches, cooking for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
