Ingredients

1 large cucumber, thinly sliced

8 oz cream cheese, softened

1/4 cup fresh dill, finely chopped

1 tbsp lemon juice

Salt and pepper, to taste

8 slices of whole grain or rye bread

1 tbsp capers (optional)

Fresh dill sprigs for garnish (optional)

Instructions

Prepare the Cream Cheese Mixture: In a bowl, combine the softened cream cheese, chopped dill, lemon juice, salt, and pepper. Mix well until smooth and creamy.

Add Optional Ingredients: If using capers, fold them gently into the cream cheese mixture for an extra kick of flavor.

Assemble the Sandwiches: Take 4 slices of bread and spread a generous layer of the cream cheese mixture on each slice.

Layer the Cucumber: Place the thinly sliced cucumbers evenly over the cream cheese layer on each of the 4 slices. Make sure to cover them entirely for a refreshing crunch.

Top It Off: Spread the remaining 4 slices of bread with the cream cheese mixture, then carefully place them on top of the cucumber-covered slices, cream cheese side down.

Cut the Sandwiches: Use a sharp knife to cut the sandwiches into quarters or halves, diagonally or straight across, depending on your presentation preference.

Chill and Serve: Arrange the sandwiches on a serving platter, garnish with fresh dill sprigs if desired, and refrigerate for at least 30 minutes before serving to let the flavors meld.
