12 oz (340g) fresh egg noodles or any preferred noodle

1 ½ cups cold cooked chicken, shredded (can use rotisserie chicken)

½ cup creamy peanut butter

¼ cup soy sauce (low sodium preferred)

¼ cup rice vinegar

2 tablespoons sesame oil

2 tablespoons honey or maple syrup

2 teaspoons grated fresh ginger

1 tablespoon garlic, minced

1 tablespoon sriracha or chili garlic sauce (optional for heat)

1 cup cucumber, julienned

1 cup carrots, grated or julienned

¼ cup scallions, chopped

2 tablespoons sesame seeds, toasted

Fresh cilantro leaves for garnish (optional)

Instructions
 

Cook the Noodles: In a large pot of boiling salted water, cook the fresh egg noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a medium bowl, whisk together the creamy peanut butter, soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, and sriracha until smooth and well-combined. Adjust seasoning to taste - if you like it sweeter, add more honey; for more tang, add more rice vinegar.

      Combine Ingredients: In a large mixing bowl, add the cold noodles and shredded chicken. Pour the sesame sauce over the top and toss until everything is evenly coated.
