1 cup all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup granulated sugar

2 teaspoons vanilla extract

1 cup mini chocolate chips

1 cup semi-sweet chocolate chips (for coating)

1 tablespoon coconut oil (optional, for smoother coating)

Instructions
 

Prepare the Flour: In a medium bowl, spread the all-purpose flour on a baking sheet and toast it in a preheated oven at 350°F (175°C) for 5-7 minutes. This step ensures the flour is safe to eat. Allow it to cool completely.

    Mix the Dough: In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar using a hand mixer or stand mixer on medium speed until light and fluffy (about 2-3 minutes).

      Add Flavors: Add the vanilla extract and mix until well combined.

        Combine Dry Ingredients: In another bowl, whisk together the cooled flour, baking soda, and salt. Gradually add this mixture to the butter-sugar mixture, mixing until just combined.

          Stir in Chocolate Chips: Fold in the mini chocolate chips until evenly distributed throughout the dough.

            Form the Truffles: Using a tablespoon, scoop out the cookie dough and roll it into small balls (about 1 inch in diameter) using your hands. Place them on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up.

              Melt Chocolate: While the truffles are chilling, melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth. If desired, stir in the tablespoon of coconut oil to make the coating smoother.

                Coat the Truffles: Remove the cookie dough balls from the refrigerator. Using a fork or toothpick, dip each ball into the melted chocolate, allowing any excess to drip off. Place the coated truffles back on the parchment-lined baking sheet.

                  Chill: Once all truffles are coated, refrigerate them again for about 15-20 minutes to set the chocolate.
