For the Cookie Crust:

2 cups chocolate sandwich cookie crumbs (like Oreos)

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

24 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1 cup sour cream

1/2 cup heavy cream

1/2 cup crushed chocolate chip cookies (to mix in)

For the Topping:

1 cup blue frosting (store-bought or homemade)

1 cup crushed chocolate chip cookies (for garnish)

1 cup mini chocolate chip cookies (for decoration)

Optional: edible eyes for decoration

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a bowl, combine the chocolate sandwich cookie crumbs and melted butter. Mix until the crumbs are evenly coated.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then let it cool while you prepare the filling.

          Make the Cheesecake Filling:

            - In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.

              - Gradually add the granulated sugar, mixing well until fully incorporated.

                - Add the vanilla extract and mix again.

                  - Incorporate the eggs, one at a time, blending thoroughly after each addition.

                    - Mix in the sour cream and heavy cream until the filling is smooth.

                      - Fold in the crushed chocolate chip cookies gently.

                        Assemble the Cheesecake:

                          - Pour the cheesecake filling over the cooled cookie crust, smoothing the top with a spatula.

                            - Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly (it will firm up as it cools).

                              - Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.

                                Decorate the Cheesecake:

                                  - Remove the cheesecake from the springform pan and place it on a serving plate.

                                    - Spread the blue frosting evenly over the top of the cheesecake.

                                      - Sprinkle crushed chocolate chip cookies generously over the frosted top.

                                        - Place mini chocolate chip cookies around the edge for decoration.
