Corn Salad with Lime Dressing

4 cups fresh corn kernels (about 6 ears of corn)

1 cup cherry tomatoes, halved

1 medium red bell pepper, diced

1/2 cup red onion, finely chopped

1/2 cup fresh cilantro, chopped

1 avocado, diced

1 jalapeño, seeded and minced (optional for heat)

Juice of 2 limes

1/4 cup extra-virgin olive oil

1 teaspoon honey or agave syrup

Salt and pepper to taste

Instructions
 

Prepare the Corn: If using fresh corn, remove the kernels from the cobs and boil or steam them for about 3-5 minutes until tender. Drain and let cool. If using canned or frozen corn, ensure it's drained and defrosted before use.

    Mix the Base: In a large mixing bowl, combine the cooled corn kernels, cherry tomatoes, red bell pepper, red onion, and cilantro. If you are adding jalapeño for heat, incorporate it at this stage.

      Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey (or agave syrup), salt, and pepper until well combined.

        Combine and Toss: Drizzle the lime dressing over the corn mixture. Toss gently until everything is well coated.

          Add Avocado: Just before serving, gently fold in the diced avocado, being careful not to mash it.

            Serve and Enjoy: Serve the salad chilled or at room temperature, garnished with additional cilantro if desired.
