Ingredients

1 cup cottage cheese (drained)

1/2 cup almond butter (or peanut butter)

1/2 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1/4 cup protein powder (chocolate or vanilla flavor)

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan or line it with parchment paper for easy removal.

Blend Cottage Cheese: In a mixing bowl or a food processor, add the cottage cheese and almond butter. Blend until the mixture is creamy and smooth, ensuring there are no lumps.

Mix Wet Ingredients: Add honey (or maple syrup) and vanilla extract to the blended mixture. Blend again until thoroughly combined.

Combine Dry Ingredients: In a separate bowl, whisk together cocoa powder, protein powder, baking powder, and salt. This step is essential to ensure that the dry ingredients are evenly distributed.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix. If you’re using dark chocolate chips and chopped nuts, fold them in at this stage.

Transfer to Pan: Pour the brownie batter into the prepared baking pan and spread it evenly using a spatula.

Bake: Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Avoid overbaking for the best texture.

Cool Down: Once baked, remove the brownies from the oven and allow them to cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely.

Slice and Serve: Once cooled, slice into squares or rectangles, and enjoy your healthy, protein-packed brownies!
