2 cups rolled oats

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

2 cups almond milk (or any milk of your choice)

1/4 cup maple syrup (or honey)

2 tablespoons melted coconut oil (or butter)

2 large apples, cored and diced (preferably Granny Smith or Honeycrisp)

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

1 teaspoon vanilla extract

Fresh apple slices and a sprinkle of cinnamon for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking dish with coconut oil or cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, nutmeg, and salt. Stir until evenly mixed.

      Combine Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, melted coconut oil, and vanilla extract until well combined.
