1 lb fresh crab meat

1 lb shrimp, peeled and deveined

4 cups seafood stock

1 cup heavy cream

1 medium onion, diced

2 cloves garlic, minced

1 rib celery, diced

1 medium carrot, diced

1 tsp tomato paste

1/2 cup dry white wine

2 tbsp olive oil

2 tbsp unsalted butter

1 tsp Old Bay seasoning

1/2 tsp cayenne pepper (adjust to taste)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil and butter over medium heat. Add the diced onion, celery, and carrot. Sauté for about 5-7 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Deglaze the Pot: Pour in the dry white wine and allow it to simmer for about 3-4 minutes until it has reduced slightly and the alcohol has cooked off.

      Add Tomato Paste and Spices: Stir in the tomato paste, Old Bay seasoning, cayenne pepper, and season with salt and black pepper. Cook for another 2 minutes to combine the flavors.

        Introduce the Seafood Stock: Pour in the seafood stock and bring the mixture to a gentle boil. Reduce heat and allow it to simmer for 15-20 minutes to let the flavors meld.

          Blend for Creaminess: Using an immersion blender, carefully blend the soup until smooth (or transfer to a blender in batches, making sure to let the steam escape). If you prefer a chunky bisque, blend only half the mixture or leave it as is.

            Add the Cream and Seafood: Return the blended mixture to the pot over low heat. Stir in the heavy cream, then add the crab meat and shrimp. Simmer for another 5-7 minutes or until the shrimp are pink and cooked through.

              Adjust Seasoning: Taste the bisque and adjust seasoning if necessary. Add more cayenne for heat or salt for flavor.

                Serve: Ladle the bisque into bowls and garnish with fresh chopped parsley. Serve hot with crusty bread or crackers.
