Ingredients

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

Zest of 1 large orange

1 teaspoon vanilla extract

1 cup buttermilk

1 ½ cups fresh cranberries (if using frozen, don't thaw)

½ cup chopped walnuts or pecans (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Creaming Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is pale and fluffy, about 3-5 minutes.

Adding Eggs and Flavorings: Add the eggs, one at a time, mixing well after each addition. Then, mix in the orange zest and vanilla extract until everything is well combined.

Combining with Buttermilk: Gradually alternate adding the dry ingredients and the buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix just until combined; do not overmix.

Incorporating Cranberries: Gently fold in the fresh cranberries and chopped nuts, if using, until evenly distributed in the batter.

Baking the Cake: Pour the batter into the prepared cake pan, smoothing the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cooling: Once done, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Serving: Once cooled, dust the top with powdered sugar if desired. Slice the cake into wedges and serve with a warm cup of coffee or tea.
