1 ½ cups all-purpose flour

½ cup granulated sugar

¼ cup brown sugar, packed

2 tsp baking powder

½ tsp baking soda

½ tsp salt

Zest of 1 large orange

1 cup fresh cranberries, chopped (or frozen and thawed)

½ cup orange juice (freshly squeezed preferred)

1/3 cup vegetable oil

1 large egg, lightly beaten

1 tsp vanilla extract

¼ cup chopped walnuts (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and orange zest.

      Combine Wet Ingredients: In another bowl, mix the orange juice, vegetable oil, egg, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
